Gizzard and Plantain

Ingredients
2 Plantain
Turkey Gizzard /Chicken Gizzard
250g
Ofe mmanu excl. meat (as per recipe)
200ml
Vegetable/Olive oil
10ml
Maggi stock
4 cubes

Preparation
- Place the gizzard in enough water to submerge it adding the stock cubes. Boil for 10 mins.
- Collect the gizzard and fry in 10ml of oil for 5 mins.
- Cut the plantain into sugar-cube-sized pieces and shallow fry it in the oil until golden then add to the frying pan containing the gizzard.
- Pour 200 ml of Ofe mmanu (as per recipe) into the frying pan containing the gizzard and plantain.
- Allow the mixture to simmer and mix for 5 mins.
